Yum Sanad

Background

Yum Sanad or Yum Sanab is cooked by mixing various vegetables together such as Acacia, Leucaena (krathin) yard long beans, morning glory, banana blossoms and Thai eggplants.

 

Nutrition Facts

The vegetables in Yum Sanad contain various vitamin and minerals. Banana blossom helps increase lactation in breastfeeding. Eggplant has pectin which helps to control the glucose level in diabetics’ patients.


Ingredients

  • 120 grams boiled minced pork,
  • 50 grams boiled yard long beans
  • 50 grams boiled morning glory
  • 80 grams boiled banana blossom
  • 80 grams boiled pea eggplant
  • 2 tablespoons roasted white sesame seeds
  • 2 tablespoons chopped garlic
  • 1 tablespoon spring onion
  • 1 tablespoon sliced coriander
  • 1 cup deep fried shallots
  • 1 cup boiled fermented fish liquid

Curry paste ingredients

  • 7 grilled dry chilies
  • 40 grams grilled shallot
  • 40 grams grilled garlic
  • 1 tablespoon shrimp paste

KaengKluay Dib (Thai Pork Red Curry with Unripe Green Bananas)

Background GaengKluay Dib is a curry using a cultivated banana as an ingredient because it can be found easily.   Nutrition Facts Cultivated banana contains tannins which help to treat gastric ulcer. Prevents from infection and help to decrease the acid in the stomach.   Ingredients 400 grams Unripe cultivated banana 100 grams streaky pork 50 grams Cha-om or Acacia Pennata 50 grams sliced WildbetalLeafbush (Cha Plu) 1 tablespoon sliced shallot Curry paste ingredients 15 bird’s eye chilies 10 grams cloves of garlic 30 grams shallot 1 tablespoon sliced galangal 1 tablespoon sliced lemongrass 1 tablespoon shrimp paste 1 tablespoon boiled fermented fish ½ teaspoon salt

Gai-Yang-Kor-Lae

  Background Gai-Yang-Kor-Lae is original recipe of Muslim in southern Thailand especially in Pattani and also very popular in Malaysia. In Melayu language called “ Ar-Yair-Kor-Lae ”  that means rolling chicken, some recipe served with grilled coconut sticky rice.   Nutrition facts Chicken is rich in protein but low fat even marinated in coconut milk, it still contains low fat but soft texture. Before grill chicken, it has to be marinated with Thai herbs to make yummy aroma. It is also beneficial in relieving gas in stomach and reducing flatulence.   Ingredients 1 kg chicken thigh 1 cup coconut milk 5 dried red chilies without seeds, soaked 30 grams shallot, sliced 20 grams garlic, peeled 2 teaspoons turmeric, sliced 1 teaspoon pepper seeds ½ teaspoon grounded cumin 1 teaspoon shrimp paste 10grams ginger, sliced 2 tablespoons tamarind juice

Laab Mu (Spicy Minced Pork with Condiments)

Background Laab is the local menu of the Northeast and North of Thailand. The dish is cooked by using minced meat and combined with the condiments. Laab is a menu with cooked meat before consuming.   Nutrition Facts Laab is high in protein from the pork.
