Background

Tam Som-O or Tam-Baa-O is the mixture of pomelo and spicy ingredients in northern style.Furthermore for a tasty flavor, we will add crab sauce or nampu as a condiment.

Pomelo is considered as a citrus fruit highly recommended as a great source of Vitamin C. In additional it is well-known for detoxification. Consuming pomelo daily can help fight with cancer.Another ingredient is round eggplant, it is a great source for a dietary fiber that keeps the digestive system functioning at a high level. Fiber is essential for gastrointestinal health as well as for the regular movement of the bowels.

 

Ingredients

200 gramspomelo or grapefruit

5 grams bird’s eye chili

5 grams Thai garlic,peeled

40 gramsround eggplant, thinly sliced

2 tablespoon lemongrass, thinly sliced

1 tablespoon palm sugar

2 tablespoon boiled fermented fish ( namplaraa )

½ teaspoon crab sauce or nampu

Pad-Mee-Chai-Ya

    Background It is originally called “ PadMee ” founded more than 100 years as a local dish of Chaiya district in SuratThani province. It is imilar to Pad Thai dish but the different is that Chaiya noodles have ingredients as pound dried chilies with shrimp paste and shallots and simmered with coconut cream and seasoned the flavor as sweet, salty and sour.   Nutrition facts Pad-Mee-Chai-Ya contains high carbohydrate from rice noodles that made from water and rice flour. Rice noodles provide you enough carbohydrate at 40% of your recommended daily consumption. The carbohydrate found in rice noodles promotes waste elimination and improves your digestive system as well. Shrimp contains high protein and we gain fat from coconut milk, vitamins and minerals from fresh vegetables.   Ingredients 200 grams soaked thin rice noodles or Chan noodles 120 grams shrimp, peeled 5 pieces dried red chilies without seeds 30 grams shallot, sliced ½ teaspoon shrimp paste 1/3 cup coconut milk 1 tablespoon fish sauce 1 tablespoon palm sugar 1tablespoon tamarind juice

Yam-Tai-Pla

Background From popular pickled fish bladder or Tai-Pla, people create another amazing recipe called “ Yam-Tai-Pla ”, it is a spicy salad with coconut milk and herbs. Tai-pla is one kind of food preservations in southern part of Thailand that normally cooked as “ Kaeng Tai Pla” recipe. It is a legendary recipe developed by people in the fishing community of Southern Thailand. They want to find a way to use the fish guts rather than toss them out. Nutrition facts Tai-Pla is a pickled fish bladder as a great source of lean protein and omega-3 fat, even more combined with grilled fish, it totally becomes plenty of protein. Coconut milk contains beneficial fat called lauric acid, a medium-chain fatty acid that’s easily absorbed and used by the body for energy. Coconut milk can help lower cholesterol levels, improve blood pressure, and prevent heart attacks or stroke. Ingredients 200 grams Tai-Pla Smashed Turmeric and lemongrass, 4-5 pieces of kaffir lime leaves for boiling with Tai-Pla 1 cup coconut cream ½ cup lemongrass, sliced ½ cup shallot, sliced 1 tablespoon galangal, sliced ¼ cup finger root, sliced 5 grams chili, chopped 5 pieces of kaffir lime leaves 2 tablespoons lime juice 2 tablespoons coconut sugar 80 grams grilled mackerel fist or Pla-O

Gaeng Keow Wan Neua (Green beef curry)

Background Green beef curry is mad from beef, coconut cream, green chilies and herbs. The dish is influenced by Muslim who are preferred eating meat and refrain from eating pork. Nutrition facts The dish is high in protein, iron, zinc and phosphorus. The fat from coconut cream is balance with various kinds of herbs from Keow-wan curry paste. Ingredients ·       4 cups coconut cream ·       ½ cup Keow-wan curry paste ·       300 grams beef, thinly sliced ·       100 grams Thai eggplants, cut into bite-size ·       20 grams pea eggplants ·       3 tbsp. fish sauce ·       1 tpsp. palm sugar ·       50 grams sweet basil ·       Chee Fah chilies (spur chilies), sliced Keow-wan curry paste ingredients ·       11 Chee-fah chilies (green chilies), remove seeds ·       ¼ cup lemon grass, thinly sliced ·       ¼ cup shallots, sliced ·       2 tbsp. garlic cloves, crushed ·       1 tsp. sliced kaffir lime zest ·       1 tsp. coriander roots, sliced ·       1 tsp. black pepper corns ·       1 tsp. shrimp paste ·       4 tsp. coriander seeds, roasted ·       2 tsp. cumin, roasted Put all of ingredients in a mortar and keep pounding until everything is well-blended. Chili leaves can be added for stronger green color.
