Background

Khao-Khaeb is another kind of snack that will be served when we entertain the visitors during the Northern Thai New Year, a buddhist ordination and other festivities.

 

Nutrition facts

Sesame seed is a powerful food that contains quality protein and magnesium.  Various nutrients contribute reduction of blood pressure, lower cholesterol levels and good for digestion. The high fiber content of sesame seeds helps the intestines with elimination. Sesame prevents lower cholesterol levels, because it contains phytosterols that block cholesterol production.

 

Ingredients

1 kg. Glutinous rice grains

3 tablespoon of black sesame

1 tablespoon of salt

Pla Ra Sab Song Kruang (Minced Fermented Fish) ปลาร้าสับทรงเครื่อง

  Bcakground Pla Ra or fermented fish is made by preservation, very famous in the Northern and Northeastern Thailand. Northeasterners love to use fermented fish as the main ingredient in almost every dish. Pla Ra Sab Song Kruang is one of the most well known menus.   Nutrition Facts Protein from the fermented fish prevents the formation of saturated fat or cholesterol. Lime juice is packed with Vitamin C. Galangal, lemongrass and kaffir lime leaf boost the appetite, expel the gas and aid the vascular circulation.   Ingredients 1 cup fermented fish (only the meat) 8 grams Bird’s eye chilies 6 tablespoon thinly sliced lemongrass 2 tablespoons thinly sliced young galangal 2 tablespoons shredded kaffir lime leaves 2 tablespoons chopped galingale 7 tablespoons chopped shallots 7 tablespoons chopped garlic Tamarind juice Sugar

KaengKhanun (Young Jackfruit Curry)

Background Formerly, KaengKhanun or KaengBumnun is cooked when important ceremonies because theNorthern people believe that khanun (jackfruit) is a lucky name in Thai.                                      Nutrition Facts Young jackfruit is high in protein, fat, fiber, with high antioxidants.   Ingredients 300 grams pork ribs 500 grams young jackfruit, cut into bite-size pieces 200 grams roughly pounded tomatoes 50 grams handful Cha-om or Acacia Pennata 3 tablespoons fish sauce 5 cups water   Curry Paste ingredients 8 large dried chilies 1 teaspoon salt 1 tablespoon sliced galangal 3 tablespoons sliced garlic 4 tablespoons sliced shallots 1 tablespoon fermented fish

Lon-Puu-Kem

    Background Lon-puu-kem is a sweet cold dip made of salted black crab, ground pork and coconut cream. It’s served with various vegetables such as Thai eggplant, sliced mangoes and radishes. As southern part is connected to sea so there are many crabs to preserve as a salty crab.   Nutrition facts Crab highly contains potassium and zinc. The main ingredient is variety of herbs that we add in for example shallot, lemongrass and fresh chili which give good flavor. In addition to serve aside with various of fresh vegetables. Fresh vegetables such as white turmeric, lotus and green eggplant have high content of various vitamins and minerals.   Ingredients 5 pieces salted crab, cut in half 1 cup coconut cream 30 gramsshallot, thinly sliced 50 grams lemongrass stalk, thinly sliced 5 grams bird’s eye chili, sliced 3 tablespoon coconut sugar
