Background

Nam PrikKa Pi is traditional Thai namprik(chili dipping) that is one of the most popular cooking recipes in every home because it is easily cooked and can be kept long.

The most delicious fish that always go with is “ Pla Too ” or mackerel fish so it becomes frequently called as “ Nam prikpla too ”

If you have a leftover Nam Prik, just simply mix Nam Prik together with rice and mackerel fish. This is a good technique to make a new dish from the leftover.

This recipe of fried rice contains the five food groups as adding some vegetables. We also get carbohydrates from rice, protein from shrimp paste ( ka-pi ), Omega 3 fat from mackerel fish which is at a high level of sea fish. In addition, the oil from frying and fresh vegetables that we eat together highly contain vitamins, minerals and fiber.

 

Ingredients

2 cups steamed rice

80 grams mackerel fish, fried

3 tablespoons nam-prik-ka-pi

1 tablespoon vegetable oil for frying

    Background Abb-Samong-Moo or Abb-Ong-Or, the main ingredient is fresh pork brain, mixed with chili paste and wrapped in banana leaf. Nam Prik Ma Kham (Chili sauce with tamarind)

Background Nam Prik Ma Kham is a house hold Thai food, available nearly everywhere. It is made from young tamarind, shrimp paste, chilies, garlic and minced pork. The chili sauce should be sour first, then salty and sweet. The dish is served with vegetables.   Nutrition facts Tamarind is high in vitamin C. 100 grams of tamarind provide 44 milligrams of vitamin C and 429 milligrams of calcium, that can help to reduce body temperature and strengthen our bones.   Ingredients 80 grams young tamarind 20 grams dried shrimp, finely pounded 1 tablespoon shrimp paste, grilled 3 grams garlic 5 grams chili, mix of red and green chilies 2 tablespoon fish sauce 2 tablespoon palm sugar

Gaeng Keow Wan Neua (Green beef curry)

Background Green beef curry is mad from beef, coconut cream, green chilies and herbs. The dish is influenced by Muslim who are preferred eating meat and refrain from eating pork. Nutrition facts The dish is high in protein, iron, zinc and phosphorus. The fat from coconut cream is balance with various kinds of herbs from Keow-wan curry paste. Ingredients ·       4 cups coconut cream ·       ½ cup Keow-wan curry paste ·       300 grams beef, thinly sliced ·       100 grams Thai eggplants, cut into bite-size ·       20 grams pea eggplants ·       3 tbsp. fish sauce ·       1 tpsp. palm sugar ·       50 grams sweet basil ·       Chee Fah chilies (spur chilies), sliced Keow-wan curry paste ingredients ·       11 Chee-fah chilies (green chilies), remove seeds ·       ¼ cup lemon grass, thinly sliced ·       ¼ cup shallots, sliced ·       2 tbsp. garlic cloves, crushed ·       1 tsp. sliced kaffir lime zest ·       1 tsp. coriander roots, sliced ·       1 tsp. black pepper corns ·       1 tsp. shrimp paste ·       4 tsp. coriander seeds, roasted ·       2 tsp. cumin, roasted Put all of ingredients in a mortar and keep pounding until everything is well-blended. Chili leaves can be added for stronger green color.
