Background

Kuay-Teow-Rad-Na is a Cantonese single noodle dish. Originated in China, this dish is commonly found when Chinese people started their business for restaurant or noodles shop. In the first period, they cooked only fried noodles dish for Chinese people. Once it was an easy single dish, it become popular among Chinese and Thai people.

Ingredients

120 grams fat rice noodles

50 grams pork, sliced

50 grams Chinese kale, cut in pieces

2 tablespoons fermented soy bean sauce

1 tablespoon light soy sauce

1 cup pork or chicken stock

2 tablespoons corn flour mixed with some water

2 tablespoons vegetable oil for frying

Background Som Tam Laos is a papaya salad adapted from Laos, the menu varies up to each community. The main ingredient is the fermented fish and papaya. The difference named called is to differentiate between Thai and Laos papaya salad.  Formerly is known as “Tam Mak Hung.”   Nutrition Facts Som Tam Laos contains mineral from various vegetables and ingredients. The papaya enzyme, is a useful digestive aid. Lime juice, tomatoes and chilies are high in Vitamin C. Gang Leung Noi Mai Dong (Hot yellow Seer fish curry with pickled bamboo shoots)

Background Hot yellow Seer fish curry is made from fresh turmeric, chili paste and Seer fish, and tastes spicy, salty, sour and a bit of sweet. The dish is a household southern food, and available nearly everywhere.   Nutrition facts The dish contains vitamin C and Bioflavonoids. Having the dish prevents a constipation, relives a cold and reduces a risk of cancer.   Ingredients ½ cup chili paste 1 cup pickled bamboo shoots 300 grams Seer fish, cut into four pieces 100 grams pineapple, sliced 2 tbsp. fish sauce 2 tbsp. tamarind juice   Chili paste ingredients: 20 chilies, 1 inch long turmeric, 7 garlic cloves, 1 tbsp. shrimp paste and 1 tsp. salty. Put all of ingredients in a mortar and keep pounding until everything is well-blended.
