Chicken Massaman curry, taste and smell good as Thai original style

  “Massaman curry” or “Saraman curry” as called by Muslim is influenced by the Malay. It was originally rich and salty but later Thai people has adjusted the recipe to be more familiar. When talking about Thai Massaman curry, it shall be suitable for those who like rich and sweet cuisine. Massaman curry is popular in every region, both in street food shop or luxury restaurant because it is easy to eat. Children who start eating spicy can eat it because the soup is slightly spicy to stimulate your taste bud. Plus, the sweetness and richness of coconut cream that the chef carefully selected and cooked tastes very good with rice and also Thai rice noodle (Kanomcheen). If anyone would like to cook this at home, I brought the recipe from Openrice as set out below. Ingredients for Massaman curry paste – 5-8 large dried chilies                                   – 5 dried guinea-peppers –  1 tablespoon of chopped coriander root      – 1 tablespoon of roasted coriander seed –  1 teaspoon  of roasted cumin                       – 1 roasted cadamon –  1 roasted cinnamon                                          – 1 teaspoon  of chopped galangal – 2 tablespoons of lemon grass                        – 2 ½ tablespoons of flamed garlic – 2 tablespoons of flamed shallot                    – 1 teaspoon  of black pepper – 2 teaspoon of shrimp paste                           – ¾ teaspoon of slat ส่วนผสมChicken Massaman curry – ½ kilogram of drumstick or chicken breast              – 200 grams of chicken Massaman curry paste (You can increase the amount if you like spiciness) – 4-5 potatoes, washed, boiled and cut into large pieces        – 3 onions – ¼ bowl of roasted peanut                                         – ¼ bowl of good quality fish sauce – ½ bowl of coconut palm sugar                                 – ¼ bowl of tamarind juice – 1 bowl of pure coconut cream                                  – 4-5 bowls of thin coconut cream Instruction Boil the pure coconut cream until the oil float up using medium heat. Add Massaman curry paste and stir it. Add drumstick into the mixture and stir fry until it is well done. Add thin coconut cream and boil it until the chicken is soft. Season it with fish sauce, coconut palm sugar and tamarind juice. Add onions and potatoes and top with roasted peanut when the soup is boiling again. Turn off the stove and serve the dish.   “Padthai” is one of Thai street foods that is influences by Chinese food. Formerly it was called “fried noodle.” Its recipe has been developed to be in Thai style and later called “Padthai noodle” and shortly called “Padthai” according to new name of “Thailand” eventually and the taste of Padthai is always in the heart of the tourists all over the world. Generally Padthai shall be made of rice noodles fry with egg, chopped Chinese chives, bean sprouts, chopped sweet pickled radish, yellow tofu, roasted peanut and dried shrimp at high temperature, seasoning with chili, fish sauce and sugar, served with lime (Pork shall not be used as an ingredient because it is an ingredient of Chinese cuisine … (This is the story told by people in the past.) For side dish, there shall be Chinese chive leaves, fresh bean sprouts and banana blossoms.  (Some Padthai shops shall add pork into the dish which may be preference of the shop owner.) Some shops may use Sen Chan which is more chewy than the rice noodles  and the dish shall be called “Padthai Senchan” or some shops use rice vermicelli noodles and the dish shall be called “Woonsen Padthai” as well as Korat’s stir fried noodle that is similar to Padthai and can be eaten with Somtam. Let’s try it.   Red pork ingredients : – 1 piece of pork fillet ( 500 grams) – 2 stems of coriander – 7 cloves of large garlic – 1 tablespoon of sweet gravy powder – 1 bowl of sugar – 1/2 bowl of fish sauce – 1 teaspoon of grounded pepper – 1 teaspoon of red food coloring ,   Cooking instruction for red pork : – Beat the coriander root and garlic with peel – Stab the pork fillet to allow the ingredient to soak into it. Red pork sauce’s ingredients: – Pork stock – 4 tablespoons of soy sauce – 4 tablespoons of brown sugar – The remaining of sauce from the making of red pork – 1/2 bowl of roasted white sesame – 1/4 bowl of dissolved potato flour Easy instruction : – Grind the white sesame and peanut in food blender – Boil the stock and add the remaining of sauce from the making of red pork in to the stock. Boil for 10 minutes and scoop the remaining of sauce from red pork out. Add black soy sauce and the grounded white sesame and peanut. – Gradually add the dissolved potato flour into the pot little by little and stir it consistently in order to avoid lumps. Then it’s finished. It is ready to be put on the plate and served.
