Background

Naem or northern Thai fermented sausage, is frequently made from meat such as pork or beef but nowadays the most popular consumption is made from pork. In the Northern part of Thailand, we usually call Moo-Som and Jin SomMoak. It will become more delicious and tasty by grill.

Being high in protein and rich in many vitamins and minerals is main beneficial of pork, all the essential amino acids is necessary for the growth and maintenance of our bodies.The health benefit of iron mainly provides oxygen to organ systems through red blood cell production.

 

Ingredients

1 Kg. minced pork

100 grams pork skin

20 grams Thai garlic, peeled

1 tablespoonsalt

1 cupkaonung or steamed rice

Laab Kua (Spicy Pork Salad)

Background It is a popular dish at ceremonies and special occasions of the Lanna tradition due to the reason that  “Laab” means lucky. However, the Northern recipe is different from the North –Eastern by cooking with meat and curry paste instead of roasted rice.   Nutrition Facts Laab Kua is high in energy and protein. The condiments such as garlic, galangal, lemongrass, kaffir leaves contain vitamins and minerals (zinc and calcium), help to expel the gas and good for the digestive system.   Ingredients 300 grams minced pork 100 grams pig’s intestine 100 grams pig’s liver 100 grams pig’s skin, boiled and cut into small pieces 3 tablespoons roughly chopped onion spring 3 tablespoons roughly chopped coriander 3 tablespoons fish sauce 2 tablespoons chopped garlic 4 tablespoons vegetable oil 2 tablespoons sliced long coriander 4 tablespoons roughly sliced Vietnamese Coriander 2 tablespoons sliced kaffir lime leaves   Curry paste ingredients 5 dried chilies, deep-fried 10 grams grilled garlic 30 grams grilled shallot 1 teaspoon chopped roasted galangal 1 tablespoon chopped lemongrass 1 teaspoon salt 1 teaspoon roasted coriander seeds

Khao-Khaeb

    Background Khao-Khaeb is another kind of snack that will be served when we entertain the visitors during the Northern Thai New Year, a buddhist ordination and other festivities.   Nutrition facts Sesame seed is a powerful food that contains quality protein and magnesium.  Various nutrients contribute reduction of blood pressure, lower cholesterol levels and good for digestion. The high fiber content of sesame seeds helps the intestines with elimination. Sesame prevents lower cholesterol levels, because it contains phytosterols that block cholesterol production.   Ingredients 1 kg. Glutinous rice grains 3 tablespoon of black sesame 1 tablespoon of salt

Nam-Prik-Nam-Pu

    Background Nam – Pu is one of the most popular dipping sauces of local people in Northern Thailand. In additional nam – pu is also one of favorite seasonings that is widely used as a condiment. Mixing nam-pu with other ingredients is really tasty.   Nutrition facts Chilies in nam-pu carry a good amount of vitamin C that is an essential nutrient required for stimulating the appetite and the body for the development. Garlic is beneficial in enhancing the growth of tissue in our body, strengthening body immune from cancer and containing a strong antioxidant.   Ingredients 15 grams bird’s eye chili 15grams Thai garlic, peeled 30 grams shallot 1 tablespoon lemongrass, thinly sliced 1 tablespoon nam-pu( crab paste ) ½ teaspoon of salt
