Background

The south has a huge coastline where squid is easily found. People usually cook squid by mixing with turmeric to help reduce smell and also yellow color from turmeric makes food attractive.

 

Nutrition facts

Squid highly contains cholesterol but also has omega 3 fat. The health benefits of good fats mainly provide oxygen to organ systems through red blood cell production. Turmeric helps comfort stomach and anti-virus in digestion system.

 

Ingredients

500 grams squid

4 tablespoons turmeric, sliced

4 tablespoons garlic, sliced

1 tablespoon pepper seeds

2 teaspoon of salt

Nam Prik Ma Muang (Chili sauce with green mango)

Background Nam Prik Ma Muang is made from green mangoes, shrimp past, garlic and chilies. Originally, lime juice is a main ingredient of many Thai chili sauce but in summer, Thai face with a lime shortage then green and sour mango compensates for a lack of lime during summer. Due to its favor taste, the dish is available in all seasons.   Nutrition facts A green mango is enriched with vitamin C, Dietary fiber and beta-carotene. Having the dish reduces a risk of cancer and increase immunity.   Ingredients 80 grams a sour mango, finely chopped 1 tbsp. dried shrimp, pounded 10 grams garlic cloves 5 grams chilies 15 grams Chee fah chili, sliced 1 shrimp paste, grilled 1 palm sugar 1 tsp. fish sauce 1 orange juice       Side dish: fried salt gouramy fish (Pla Sa Lid) and vegetables

Nam-Prik-Nam-Pu

    Background Nam – Pu is one of the most popular dipping sauces of local people in Northern Thailand. In additional nam – pu is also one of favorite seasonings that is widely used as a condiment. Mixing nam-pu with other ingredients is really tasty.   Nutrition facts Chilies in nam-pu carry a good amount of vitamin C that is an essential nutrient required for stimulating the appetite and the body for the development. Garlic is beneficial in enhancing the growth of tissue in our body, strengthening body immune from cancer and containing a strong antioxidant.   Ingredients 15 grams bird’s eye chili 15grams Thai garlic, peeled 30 grams shallot 1 tablespoon lemongrass, thinly sliced 1 tablespoon nam-pu( crab paste ) ½ teaspoon of salt

Lon-Puu-Kem

    Background Lon-puu-kem is a sweet cold dip made of salted black crab, ground pork and coconut cream. It’s served with various vegetables such as Thai eggplant, sliced mangoes and radishes. As southern part is connected to sea so there are many crabs to preserve as a salty crab.   Nutrition facts Crab highly contains potassium and zinc. The main ingredient is variety of herbs that we add in for example shallot, lemongrass and fresh chili which give good flavor. In addition to serve aside with various of fresh vegetables. Fresh vegetables such as white turmeric, lotus and green eggplant have high content of various vitamins and minerals.   Ingredients 5 pieces salted crab, cut in half 1 cup coconut cream 30 gramsshallot, thinly sliced 50 grams lemongrass stalk, thinly sliced 5 grams bird’s eye chili, sliced 3 tablespoon coconut sugar
