Background

Tom Klong is similar to Tom Yum but the different ingredients of Tom Klong are tamarind juice and basil and mostly cooked with fish or beef.

Tom Klong has a lot of health benefits from herbs such as galangal, lemongrass, kaffir lime leaf and basil. They are good for digestive system , controlling gas in body, and good for circulatory system. Shallot also helps about antioxidant  and  good for heart. Lastly coriander maintains bone and teeth.

 

Ingredients

600 grams Grilled catfish cut into pieces

2 tablespoon chopped Bird chili

30 grams Lemongrass stalks cut into pieces

10 grams Galangal, sliced

40 grams Cherry tomato

20 grams Shallot

3 grams Kaffir lime leave, sliced

1 tablespoon long coriander chopped

10 grams holy basil leave

Tamarind juice

Fish sauce

Goong-Mae-Nam-Tom-Mamuang (Sour soup with river prawn and raw mango)

Background This recipe is classic soup by mixing fruits together with river prawns. The red color from fat in head part of prawns makes colorful clear soup. We get sour taste from mangoes instead of adding lime juice. This is similar to Tom Yam of central part of Thailand.   Nutrition facts River prawns highly contains protein and fat. The main ingredient is variety of herbs for example shallots, lemongrass and fresh chilies and refreshed by the aroma of herbs. Furthermore, this recipe is popular eating in summer as you get a lot of sweat from it.   Ingredients 1 kg river prawns, deveined 100 grams rawgreen mango, shredded 30 gramsshallot, thinly sliced 10 grams garlic, crushed 5 grams bird’s eye chili, crushed Salt, fish sauce and lime juice 2 cups water

Gang Leung Noi Mai Dong (Hot yellow Seer fish curry with pickled bamboo shoots)

Background Hot yellow Seer fish curry is made from fresh turmeric, chili paste and Seer fish, and tastes spicy, salty, sour and a bit of sweet. The dish is a household southern food, and available nearly everywhere.   Nutrition facts The dish contains vitamin C and Bioflavonoids. Having the dish prevents a constipation, relives a cold and reduces a risk of cancer.   Ingredients ½ cup chili paste 1 cup pickled bamboo shoots 300 grams Seer fish, cut into four pieces 100 grams pineapple, sliced 2 tbsp. fish sauce 2 tbsp. tamarind juice   Chili paste ingredients: 20 chilies, 1 inch long turmeric, 7 garlic cloves, 1 tbsp. shrimp paste and 1 tsp. salty. Put all of ingredients in a mortar and keep pounding until everything is well-blended.
