Tam Korat (Korat Papaya Salad) ตำโคราช

History

Tam Korat is the papaya salad cooked with the combination of Som Tam Thai and Laos, by putting the dried shrimps, fermented fish and Thai vermicelli  noodle (KhanomJeen) and sweeten the taste. It is called Korat or NakhonRatchasima because Korat is situated in the middle between Laos and Thailand. Thus, the culture and tradition is blended between the two nations. However, the origin of  TamKorat is not originated in NakhonRatchasima, even the Korat people are not fond of the dish.

 

Nutrition Facts

Tam Korat contains minerals from the vegetables and ingredients. The papaya enzyme, is a useful digestive aid. Lime juice, tomatoes and chilies are high in Vitamin C. Thai garlic help increase the growth of body tissues and protein from the fermented fish prevent the formation of Saturated fat or cholesterol.

 

Ingredients

  • 120 grams shredded green papaya
  • 30 grams cherry tomatoes cut in half
  • 8 bird eye chilies
  • 5 grams cloves of garlic
  • 25 grams long bean sliced in small chunks
  • 1 tablespoon dried shrimps
  • 2 tablespoons shelled roasted peanuts
  • 1 tablespoon lime juice
  • ½ tablespoon fish sauce
  • 1 tablespoon boiled fermented fish

  Background SuaRongHai is considered as the steak of the Northeast Thailand or Isan. SuaRongHai is grilled the same way as the steak by using the brisket marinated with spice and eaten with chili sauce.   Nutrition Facts Meat contains a large amount of protein, beneficial to the body and repair the worn out tissues.   Ingredients  400 gram meat 3 tablespoons soy sauce 1/2 teaspoon pepper 1 teaspoon fish sauce For the sauce 1/3 cup fish sauce 1/3 cup water 1/3 cup lime juice 15 grams thinly sliced shallots 1 teaspoon thinly sliced coriander roots 1 tablespoon roasted rice 2 teaspoons cayenne pepper

Kanom Cheen Saw Nam (Fresh Thai rice noodles with coconut milk)

Background Kanom, the word is from Mon language, and Cheen means well cooked. So, it is assumed that the dish is influenced by Mon people since King Rama IV era. In summer, the weather is very hot so Thai people create the cold dish to serve during the summer. Its taste is a mix of sweetness and sour. The dish is similar to salads, and Kanom Cheen Saw Nam is accepted as a healthy dish.   Nutrition facts    About 72 grams of Kanom Cheen (Thai rice noodles) provides only 80 kcal. The dish is mad of pineapple and lemon juice which contain high vitamin C.
