Background

Tam-kra-thon or tam bak-tuen is another Northern Thai cuisine recognized for tasty and fresh ingredients. Cooked with chopped fresh santolfruit  is very delicious.

 

Nutrition facts

Santol, a rich source of vitamins C, A and pectin, helps to improve digestion and prevents constipation. The health benefits of phosphorus include improving digestion, regulating excretion, protein formation, improving energy extraction, cellular repairing and proper nutrient utilization.

 

Ingredients

300 grams fresh santols

5 grams bird’s eye chili

5 grams Thai garlic, peeled

1 tablespoon palm sugar

2tablespoons boiled fermented fish ( namplaraa )

1/2teaspoonnam-pu( crabpaste )

1 tablespoon dried shrimp

Tom Kai BaiMakham (Boiled Chicken with Tamarind Leaf)

  Background Tamarind leafis easy to find. It has sour taste thus the Northeastern people or Isan use tamarind leaf to flavor the sour taste, a distinct taste from lime and tamarind juice.   Nutrition Facts Tamarind leaf or the young tamarind leaf is used as laxative, expel intestinal gas, cure the fever and coughs. Shallot is packed with Vitamin C and antioxidants beneficial to the immune system.   Ingredients 1 kg. chopped chicken meat with bones 1 cup young tamarind leaves 4 kaffir shredded lime leaves 15 grams galangal chopped in chunks 5 grams crushed bird eye chilies 30 grams crushed lemongrass chopped in chunks 15 grams crushed shallots Fish sauce

Gaeng Keow Wan Neua (Green beef curry)

Background Green beef curry is mad from beef, coconut cream, green chilies and herbs. The dish is influenced by Muslim who are preferred eating meat and refrain from eating pork. Nutrition facts The dish is high in protein, iron, zinc and phosphorus. The fat from coconut cream is balance with various kinds of herbs from Keow-wan curry paste. Ingredients ·       4 cups coconut cream ·       ½ cup Keow-wan curry paste ·       300 grams beef, thinly sliced ·       100 grams Thai eggplants, cut into bite-size ·       20 grams pea eggplants ·       3 tbsp. fish sauce ·       1 tpsp. palm sugar ·       50 grams sweet basil ·       Chee Fah chilies (spur chilies), sliced Keow-wan curry paste ingredients ·       11 Chee-fah chilies (green chilies), remove seeds ·       ¼ cup lemon grass, thinly sliced ·       ¼ cup shallots, sliced ·       2 tbsp. garlic cloves, crushed ·       1 tsp. sliced kaffir lime zest ·       1 tsp. coriander roots, sliced ·       1 tsp. black pepper corns ·       1 tsp. shrimp paste ·       4 tsp. coriander seeds, roasted ·       2 tsp. cumin, roasted Put all of ingredients in a mortar and keep pounding until everything is well-blended. Chili leaves can be added for stronger green color.
