Background

Jum-Pa-Da or Cempedak is a tropical and exotic food of southern Thailand. It is similar to jackfruit and very popular in Southeast Asia, particularly in Malaysia. The size of the Cempedak fruit is much smaller than Jackfruit. The texture of the Cempedak flesh is soft, sweet, and has a strong aroma. It can be eaten fresh; but, it tastes much better in fritter. Deep-fried Cempedak Fritters are commonly sold in the southern part only.

 

Nutrition facts

Jum-Pa-Da or Cempedak has a sweet flavor, highly rich in vitamin A that mainly helps keep the cornea of eye healthier. This also contains dietary fiber which is high enough to maintain digestive tract health. Vitamin C also decreases the cholesterol content in the blood. Deep-Fried Cempedak is to coat the Cempedak flesh with sliced coconut batter and fry. Beware of eating too much because you can get sore throat as it has high amount of oil from deep-fry and coconut.

 

Ingredients

400 gramsJum-Pa-Da or Cempedak

300 grams rice flour

1 cup sugar

2 cupscoconut, grated

1 ½ cups water

2 tablespoons lime water (nam-poon-khao)

2 chicken eggs

3 tablespoons white or black sesame

1 tablespoon salt

Vegetables oil for fry

Gang Pu Bai Cha Plu (Crab curry with Cha Plu leaves)

Background Crab curry with Cha Plu leaves is Thai noodles with crab curry. The curry is spicy and salty and its color is yellow from turmeric. The dish is served with Thai noodles or rice vermicelli, Sen Mee or Mee Hoon.   Nutrition facts Crab contains high potassium and iron. 100 grams of crab contain 19.5 grams of protein. Cha Plu leaves are source of vitamins, calcium and beta-carotene.   Ingredients 1 cup, crab meat 2 chili curry 1 ½ cups coconut milk 1 tbsp. palm sugar 2 tbsp. fish sauce 2 Kaffir lime leaves 80 grams Cha Plu leaves, sliced 100 grams Thai noodles or rice vermicelli Curry paste ingredients: 7 Chee fah chilies,  5 dried chilies, 5-10 bird’s eye chilies,  1 tbsp. white peppers,  1 tbsp. sliced galangal,  2 tbsp. sliced lemon grass,  1 tsp. sliced kaffir lime zest,  1 tbsp. sliced turmeric,  2 tbsp. shallots,  1 tbsp. garlic clove,  1 tbsp. shrimp paste,  1 tsp. salt. Keep pounding all ingredients until everything is well-blended.

Khanom-Tako ( Thai Jelly With Coconut Topping )

    Background Khanom-Tako is made from rice flour or mung bean flour, sugar and mix with jasmine floated water.
