Khao-Pad-Nam-Prik-Long-Rua

 

Background

Nam-prik-long-rua is originally served in the palace kitchen by HRH Queen SadubLadawan, she was the first person who created the recipe of Nam-prik-long-rua. She was a person who took care of all meals for Princess, in one day while she was searching for the ingredients in the kitchen of the boat she found just only a leftover of some Nam-prik-ka-pi and other condiments, for example, Sweet pork ( Moo Waan ), Pladuk Fu (Crispy catfish) and red salted eggs that were already cooked. She fried them all together. Finally Princess was satisfied with that dish and it became a popular dish from short time preparing.

Nam-prik-long-rua is extraordinary by its ingredients as having 5 groups of nutrients and full of flavor. This dish has various tastes such as salty, spicy and sour from nam-prik, sweet from moo-waan and pla-duk-fu is crispy and crunchy also high in protein that is really good combination with vitamins in fresh vegetables.

 

Ingredients

2 cup of steamed rice

3 tablespoons nam-prik-ka-pi

3 tablespoons sweet pork (moo-waan)

1 red salted egg

2 tablespoon crispy catfish, chopped

1 tablespoon pickled garlic, sliced

Fresh variety of vegetables such as white turmeric, winged bean and cucumber

    Background In southern part, pumpkin is called “naam-tao” which can grow at backyard and popular for cooking for main dish and dessert by simple stir-fry.  It is naturally sweet without seasoning but black pepper powder should be added for spicy taste.   Nutrition facts Pumpkin is one of the best-known sources of the antioxidant beta-carotene that fights against cancer and also a rich source of vitamin A. The antioxidants and vitamins within pumpkins can prevent damage to the eyes. Additionally the potassium has a positive effect on blood pressure.   Ingredients 300 grams pumpkin, cut into bite size 10 grams shallot, sliced 5grams Thai garlic, peeled 1 teaspoon of black pepper 1 chicken egg 2 tablespoons of fish sauce 2 tablespoons of sugar Water

Tam Korat (Korat Papaya Salad) ตำโคราช

History Tam Korat is the papaya salad cooked with the combination of Som Tam Thai and Laos, by putting the dried shrimps, fermented fish and Thai vermicelli  noodle (KhanomJeen) and sweeten the taste. It is called Korat or NakhonRatchasima because Korat is situated in the middle between Laos and Thailand. Thus, the culture and tradition is blended between the two nations. However, the origin of  TamKorat is not originated in NakhonRatchasima, even the Korat people are not fond of the dish.   Nutrition Facts Tam Korat contains minerals from the vegetables and ingredients. The papaya enzyme, is a useful digestive aid. Lime juice, tomatoes and chilies are high in Vitamin C. Thai garlic help increase the growth of body tissues and protein from the fermented fish prevent the formation of Saturated fat or cholesterol.   Ingredients 120 grams shredded green papaya 30 grams cherry tomatoes cut in half 8 bird eye chilies 5 grams cloves of garlic 25 grams long bean sliced in small chunks 1 tablespoon dried shrimps 2 tablespoons shelled roasted peanuts 1 tablespoon lime juice ½ tablespoon fish sauce 1 tablespoon boiled fermented fish

Khao-Nieow-Mamuang (Sweet sticky rice with mango)

  Background Khao-Nieow-Mamuang is one of the best signature and popular Thai desserts. It is super tasty and surprisingly simple to make. The sticky rice is mixed with a sweet coconut cream and sugar mixture and topped with sliced ripe mango. The most important thing is to use a sweet and soft ripe mango, the popular mango will be “Namdokmai” or “Okrong” This is a wonderful recipe and authentic-tasting Thai dessert.   Nutrition facts Mango is called as a king of fruit as contains high nutrition for health. The yellow ripe mango has generous amounts of vitamin C and beta-carotene that easy the digestion,keep your immune system healthy and reduce the absorption of sugar from the sweet sticky rice slowly.  Moreover coconut milk boosts vitamin A and E easily to be absorbed to our body.
