Chicken Massaman curry, taste and smell good as Thai original style

“Massaman curry” or “Saraman curry” as called by Muslim is influenced by the Malay. It was originally rich and salty but later Thai people has adjusted the recipe to be more familiar. When talking about Thai Massaman curry, it shall be suitable for those who like rich and sweet cuisine.

Massaman curry is popular in every region, both in street food shop or luxury restaurant because it is easy to eat. Children who start eating spicy can eat it because the soup is slightly spicy to stimulate your taste bud. Plus, the sweetness and richness of coconut cream that the chef carefully selected and cooked tastes very good with rice and also Thai rice noodle (Kanomcheen).

If anyone would like to cook this at home, I brought the recipe from Openrice as set out below.

Ingredients for Massaman curry paste

– 5-8 large dried chilies                                   – 5 dried guinea-peppers

–  1 tablespoon of chopped coriander root      – 1 tablespoon of roasted coriander seed

–  1 teaspoon  of roasted cumin                       – 1 roasted cadamon

–  1 roasted cinnamon                                          – 1 teaspoon  of chopped galangal

– 2 tablespoons of lemon grass                        – 2 ½ tablespoons of flamed garlic

– 2 tablespoons of flamed shallot                    – 1 teaspoon  of black pepper

– 2 teaspoon of shrimp paste                           – ¾ teaspoon of slat
ส่วนผสมChicken Massaman curry

– ½ kilogram of drumstick or chicken breast              – 200 grams of chicken Massaman curry paste (You can increase the amount if you like spiciness)

– 4-5 potatoes, washed, boiled and cut into large pieces        – 3 onions

– ¼ bowl of roasted peanut                                         – ¼ bowl of good quality fish sauce

– ½ bowl of coconut palm sugar                                 – ¼ bowl of tamarind juice

– 1 bowl of pure coconut cream                                  – 4-5 bowls of thin coconut cream
Instruction

  1. Boil the pure coconut cream until the oil float up using medium heat. Add Massaman curry paste and stir it. Add drumstick into the mixture and stir fry until it is well done.
  2. Add thin coconut cream and boil it until the chicken is soft.
  3. Season it with fish sauce, coconut palm sugar and tamarind juice. Add onions and potatoes and top with roasted peanut when the soup is boiling again. Turn off the stove and serve the dish.
