Background

“Yong Tau Foo” is well-known as traditional recipe of Hakka before transformed to “Yen Ta Fo”It is Hakka’s signature recipe but the original cooking was tofu stuffed with minced pork. Then became tofu stuffed with fish. Nowadays, it is adapted to serve with fish balls and steamed morning glory, crispy squid, jelly fish and sweet -spicy red sauce that gives this dish its iconic flavor.

120 grams fine cut or flat rice noodles

50 grams Thai morning glory

15 grams crispy squid

15 gramsjelly fish

20 gramsrounded fish balls

2 tablespoon of Yen ta fo sauce

Chilies vinegar, sugar and fish sauce

Tam Sua (Northeastern style Spicy Papaya Salad and Vermicelli)

  Background Tam Sua is the papaya salad with vermicelli. Some tam sua recipe use prickles, roasted rice, oyster or bean sprout. Khai Luk Koei (Sweet and sour eggs)

Background Khai Luk Koei is one of a favorite dish among Thai people. Deep fried eggs are topped with a simple sweet tamarind sauce and crispy shallots. Kanom Cheen Num Ya (Fresh Thai rice noodle and a fish based sauce)

Background Kanom Cheen Num Ya originates with Mon people. In the past, Mon Kingdom is powerful and influence toward neighbor countries. Burma and Thai adapted the dish called Kanom Cheen Num Ya from Mon but they were preferred in different taste. Burma prefer thick sauce (Nam Ya) so they add some soft banana stalk to the sauce while Thai like to eat fish then they add shredded fish meat to the sauce.   Nutrition facts Kanom Cheen Num Ya is a nutrient food. The dish provides carbohydrate from rice noodles, protein from fish, and verities of vitamins from vegetables which are good for excretory system.
