Padthai, lovely dishes of all time

“Padthai” is one of Thai street foods that is influences by Chinese food. Formerly it was called “fried noodle.” Its recipe has been developed to be in Thai style and later called “Padthai noodle” and shortly called “Padthai” according to new name of “Thailand” eventually and the taste of Padthai is always in the heart of the tourists all over the world.

Generally Padthai shall be made of rice noodles fry with egg, chopped Chinese chives, bean sprouts, chopped sweet pickled radish, yellow tofu, roasted peanut and dried shrimp at high temperature, seasoning with chili, fish sauce and sugar, served with lime (Pork shall not be used as an ingredient because it is an ingredient of Chinese cuisine … (This is the story told by people in the past.)

For side dish, there shall be Chinese chive leaves, fresh bean sprouts and banana blossoms.  (Some Padthai shops shall add pork into the dish which may be preference of the shop owner.) Some shops may use Sen Chan which is more chewy than the rice noodles  and the dish shall be called “Padthai Senchan” or some shops use rice vermicelli noodles and the dish shall be called “Woonsen Padthai” as well as Korat’s stir fried noodle that is similar to Padthai and can be eaten with Somtam.
