Background

Nam – Pu is one of the most popular dipping sauces of local people in Northern Thailand.

In additional nam – pu is also one of favorite seasonings that is widely used as a condiment. Mixing nam-pu with other ingredients is really tasty.

 

Nutrition facts

Chilies in nam-pu carry a good amount of vitamin C that is an essential nutrient required for stimulating the appetite and the body for the development.

Garlic is beneficial in enhancing the growth of tissue in our body, strengthening body immune from cancer and containing a strong antioxidant.

 

Ingredients

15 grams bird’s eye chili

15grams Thai garlic, peeled

30 grams shallot

1 tablespoon lemongrass, thinly sliced

1 tablespoon nam-pu( crab paste )

½ teaspoon of salt

Yum Nham Sod (Fermented Pork Salad)

  Background Nham or fermented pork is made with preservation method, thus it has a sour taste. Nham is mostly cooked by adapting into Yum or salad for a better taste.   Nutrition Facts Nham or fermented pork is full of protein, iron and Vitamin B. Galangal eases constipation and helps relieve migraine headache.   Ingredients 120 grams fermented pork cut into bite size pieces 30grams sliced galangal 2 tablespoons shredded bird eye chilies 3 grams fried dry chilies 2 tablespoons shredded leeks 2 tablespoons shredded corianders 2 tablespoons shredded shallots 2 tablespoons lime juice 3 tablespoons fish sauce 1 tablespoon sugar 2 tablespoons roasted peanuts

Background In southern part, people love coconut milk spicy soup but this recipe is sweet by its ingredients such as coconut milk and bamboo shoots, frequently found in rainy season. Adding shrimp really brings out classic taste.  Sometimes add sa-taw or bitter-bean for an interesting mixture.   Nutrition facts Bamboo shoot is baby bamboo that springs up only in rainy season. It highly contains calcium with sweet flavor. The variety of nutrition such as calcium, phosphorus and fiber encourages the digestive system. Natural sweet comes from coconut milk and bitter bean has high amount of protein as 100 G contains protein 8 G. Furthermore, having shrimps as a mixture makes this dish full of 5 groups of nutrients and full of flavor. Moo Hong (Stewed pork belly)

Background Stewed pork belly tastes salty and sweetness. The dish is influenced by Chinese, and seasoned with coriander leaves.   Nutrition facts Pork is high in protein, vitamin B and zinc. 100 grams of pork provide energy to body 376 kcal, 14.4 grams protein and 35 grams fat.   Ingredients 2 pork belly 1/3 garlic clove, rough crushed ¼ cup coriander leaves, finely chopped 2 tbsp. black pepper 3 tbsp. oil 1 cinnamon stick 2 star anise 6 tbsp. back soy sauce 2 tbsp. palm sugar 1 litter water 5 light soy sauce 1 sugar
