Tam Korat (Korat Papaya Salad) ตำโคราช

History

Tam Korat is the papaya salad cooked with the combination of Som Tam Thai and Laos, by putting the dried shrimps, fermented fish and Thai vermicelli  noodle (KhanomJeen) and sweeten the taste. It is called Korat or NakhonRatchasima because Korat is situated in the middle between Laos and Thailand. Thus, the culture and tradition is blended between the two nations. However, the origin of  TamKorat is not originated in NakhonRatchasima, even the Korat people are not fond of the dish.

 

Nutrition Facts

Tam Korat contains minerals from the vegetables and ingredients. The papaya enzyme, is a useful digestive aid. Lime juice, tomatoes and chilies are high in Vitamin C. Thai garlic help increase the growth of body tissues and protein from the fermented fish prevent the formation of Saturated fat or cholesterol.

 

Ingredients

  • 120 grams shredded green papaya
  • 30 grams cherry tomatoes cut in half
  • 8 bird eye chilies
  • 5 grams cloves of garlic
  • 25 grams long bean sliced in small chunks
  • 1 tablespoon dried shrimps
  • 2 tablespoons shelled roasted peanuts
  • 1 tablespoon lime juice
  • ½ tablespoon fish sauce
  • 1 tablespoon boiled fermented fish

Background Pork satay consists of marinated pork on bamboo skewers, charcoal barbequed then served with a tasty peanut sauce and a white vinegar cucumber sauce. It is originated in Indonesia but frequently cooked as beef satay. Once this recipe was transformed into Thailand, there were cooked as pork satay instead from popular consumption of Chinese. Its ingredients  for marinated pork are coriander seeds, cumin seeds, turmeric powder and curry powder. The delicious pork satay will be mostly cooked by Chinese. It is a whole day snack. Moreover, this dish becomes a famous appetizer .   Nutrition facts Being high in protein and rich in many vitamins and minerals, this becomes main benefit of pork with all the essential amino acids necessary for the growth and maintenance of our bodies. Pork should contain some fat for soften bite and good flavor but you should be aware of too much fat consumption.   Ingredients 1 kg pork loin, sliced into 1/4-inch thick pieces 1 cup coconut milk   Pork marinade ingredients 1 tablespoon coriander seeds powder 1 teaspoon cumin seeds powder 1 tablespoon sugar 1 tablespoon turmeric powder or yellow curry powder 1 teaspoon salt 3 tablespoons vegetable oil     Peanut sauce ingredients 3 cups coconut milk ½ cup red chili paste 1/3 cup roasted peanut, grounded 2 tablespoons fish sauce 2 tablespoons palm sugar 2 tablespoons tamarind juice   Cucumber Pickle (Ajaad) ingredients 1/3 cup vinegar ½ cup sugar 2 teaspoon salt 2 pieces cucumber, diced 3 tablespoon shallot, sliced ½ piece chili, sliced

Tam-Som-O

    Background Tam Som-O or Tam-Baa-O is the mixture of pomelo and spicy ingredients in northern style.Furthermore for a tasty flavor, we will add crab sauce or nampu as a condiment.   Nutrition facts Pomelo is considered as a citrus fruit highly recommended as a great source of Vitamin C. In additional it is well-known for detoxification. Fiber is essential for gastrointestinal health as well as for the regular movement of the bowels.   Ingredients 200 gramspomelo or grapefruit 5 grams bird’s eye chili 5 grams Thai garlic,peeled 40 gramsround eggplant, thinly sliced 2 tablespoon lemongrass, thinly sliced 1 tablespoon palm sugar 2 tablespoon boiled fermented fish ( namplaraa ) ½ teaspoon crab sauce or nampu

Gaeng Ped Pla Saai Bai Ra (Red curry with fish and cumin leaves)

Background Red curry with fish and cumin leaves is a local and spicy dish which is made from pla saai (threadfin Bream fish), chilies, cumin leaves and herbs.   Nutrition facts Fish, sea fish, is source of Omega 3 fatty acid which is acknowledged to protect against cardiovascular disease by reducing blood pressure and the cholesterol and triglyceride in the blood. Consuming on a regular basis, it reduces the risk of heart disease and strengthens the immune system. Cumin leaves are extremely good for digestion and related problems, its ability to aid in digestion and improve immunity.   Ingredients 700 grams fish, Pla Saai ¼ cup chili paste ½ cup cumin leaves 3 cups water 20 grams young galangal, sliced 15 grams green pepper 3 karri lime leaves Sliced Chee fah chilies for garnishing   Chili paste ingredients: 15 grams chilies, 5 grams pieces of sliced galangal, 2 inch long turmeric, 40 grams shallots, 10 grams garlic cloves, 1 tbsp. black pepper, 2 tbsp. shrimp paste and 1 tsp. salt.  Put all of ingredients in a mortar and keep pounding until everything is well-blended.
