Background

Tam Thaad is a papaya salad that has many ingredients presenting in the same tray instead of the dish for more convenient to eat in group and it can also give a feeling of better taste.

Thai papaya salad is a healthy food full with vitamins and minerals from vegetables and seasoning such as papaya has enzymes papain which helps digestive system. Lime juice, tomato, bird chili have highly vitamin that support immune system and make your skin brighter and fresher. Then  there are many benefit from other ingredients on the tray.

 

Ingredients

100 grams Papaya, thinly sliced

20 grams tomato

10 gramsThai Olive

1 fermented crab

1 tablespoon fish sauce

2 tablespoons fermented fish sauce or Plaraa

1 lime

5grams garlic

5 grams bird’s eye chili

10 grams Thai eggplant

100 grams boiled shrimp

1 boiled egg

120 grams Fried Northeastern sausage

1/2 cup Vietnamese pork sausage

½ cup fried skin pork

40 grams Thai eggplants

Kua Kling Moo (Dried Pork Curry)

Background Kua Kling is a southern dish and it is made with pork and curry paste. The cooking technique is to stir-fry until it is dried out or roasting the mixture on a pan until dried. It has a strong taste of salt and spice, always served with fresh vegetables.   Nutrition facts The dish is yellow from turmeric and herbs. The herbs are good for digestion and relieve pain associated stomach aches and flatulence. Having the dish provides an antioxidant and reduces the risk of colorectal cancer.   Red curry paste ingredients:  20 dried chilies, 20 grams pieces of sliced galangal, 1 tbsp. black pepper, 2 inch long turmeric, 50 grams sliced lemongrass stalks, 40 grams shallots, 10 grams garlic cloves, ½ karri lime zest, 1 tbsp. shrimp paste and 1 tsp. salt. Put all of ingredients into a mortar and keep pounding everything until well-blended.   Ingredients 500 grams minced pork ½ cup red curry paste 30 grams lemon grass stalks, sliced 3 tbsp. galangal, chopped ¼ cup karri lime zest, sliced 2 tbsp. cooking oil 1 cup water 1 tbsp. sugar

Kanom Cheen Saw Nam (Fresh Thai rice noodles with coconut milk)

Background Kanom, the word is from Mon language, and Cheen means well cooked. So, it is assumed that the dish is influenced by Mon people since King Rama IV era. In summer, the weather is very hot so Thai people create the cold dish to serve during the summer. Its taste is a mix of sweetness and sour. The dish is similar to salads, and Kanom Cheen Saw Nam is accepted as a healthy dish.   Nutrition facts    About 72 grams of Kanom Cheen (Thai rice noodles) provides only 80 kcal. The dish is mad of pineapple and lemon juice which contain high vitamin C. Kaeng-Ped-Hed-Kraeng

Background Kaeng-Ped or red curry is one of the most popular recipes of Thai food with various ingredients such as green vegetables, meat, chicken and shrimp. Kaeng-Ped-Hed-Kraeng is one of the local and simple recipes that cooked with hed-kraeng (Log mushroom), coconut milk and shrimp. There are found in rainy season and mostly grow up at the cut rubber log.   Nutrition facts Hed-kraeng is local mushroom that is only found in Southern part. It looks like a fan with tiny size, no stalk, similar shape to cockle. It can last long for many days but needs to soak in water before cook.
