Background

Tam-kra-thon or tam bak-tuen is another Northern Thai cuisine recognized for tasty and fresh ingredients. Cooked with chopped fresh santolfruit  is very delicious.

 

Nutrition facts

Santol, a rich source of vitamins C, A and pectin, helps to improve digestion and prevents constipation. The health benefits of phosphorus include improving digestion, regulating excretion, protein formation, improving energy extraction, cellular repairing and proper nutrient utilization.

 

Ingredients

300 grams fresh santols

5 grams bird’s eye chili

5 grams Thai garlic, peeled

1 tablespoon palm sugar

2tablespoons boiled fermented fish ( namplaraa )

1/2teaspoonnam-pu( crabpaste )

1 tablespoon dried shrimp

Phak Lieng Tom Kati Goong (Melindjo leaves in coconut milk soup with prawn)

Background Lieng or Melindjo, a local tree of the South is 1-2 meters tall and has long leaves. Its young leaves are cooked in different dishes. Lieng leaves in coconut milk soup with prawn is a favorite dish among people in the South.   Nutrition facts Lieng leaves are rich in beta carotene which is an antioxidant and provides vitamin B, calcium and phosphorus. Having the dish helps maintain good eyesight, nourishes the skin and strengthens bones and teeth. Khai-Kwam

    Background Khai-Kwam is traditional recipe of local people in Northern Thailand. Using duck eggs is highly recommended as the larger size than chicken eggs and the shells are harder to crack. Yam-Tai-Pla

Background From popular pickled fish bladder or Tai-Pla, people create another amazing recipe called “ Yam-Tai-Pla ”, it is a spicy salad with coconut milk and herbs. Tai-pla is one kind of food preservations in southern part of Thailand that normally cooked as “ Kaeng Tai Pla” recipe. It is a legendary recipe developed by people in the fishing community of Southern Thailand. They want to find a way to use the fish guts rather than toss them out. Nutrition facts Tai-Pla is a pickled fish bladder as a great source of lean protein and omega-3 fat, even more combined with grilled fish, it totally becomes plenty of protein.
